Cranberry Orange Shortbread Cookies

Ingredients

1 1/2 c butter, room temp
1/2 c sugar
1/2 t Salt
2T orange zest
3 c flour
3/4 c Craisins

Instructions

1. Mix Ingredients.
2. When mixed, shape into 2 rectangles, 1/4-1/3” thick.
3. Wrap in plastic wrap and stick in the freezer for 10-15 minutes. Unwrap.
4. Using a sharp knife, cut into smaller rectangles.

5. Place on cookie sheet. Dock a few times with a fork.
I love using Silpat Baking Mats (like these) for this. They give the shortbread a really nice finish!
6. Bake 350 for about 15 min, until edges just begin to brown.
Optional glaze
1 T fresh squeezed orange juice
1/4 c powdered sugar

Enjoy!
